Ingredients
  

  • 4 large eggs – whisked until fluffy
  • 1 cup shredded cheese – cheddar Monterey Jack, or your favorite
  • 1 cup cooked sausage or bacon – chopped into bite-sized pieces
  • 8 small flour tortillas – soft and pliable for easy rolling
  • 1 tbsp olive oil – for brushing before air frying
  • Salt & pepper – to season the eggs

Method
 

  1. Preheat the air fryer
  2. Set your air fryer to 375°F (190°C) and let it heat for about 5 minutes. This ensures maximum crispiness.
  3. Cook the filling
  4. In a bowl, whisk together eggs, salt, and pepper. Scramble them in a skillet over medium heat until just set (about 3–4 minutes). Stir in the sausage or bacon.
  5. Assemble the taquitos
  6. Lay out tortillas on a clean surface. Add a spoonful of scrambled eggs and a sprinkle of cheese to each. Roll tightly, tucking in the sides to seal the filling. Secure with a toothpick if needed.
  7. Brush & air fry
  8. Lightly brush each rolled taquito with olive oil. Place them seam-side down in the air fryer basket in a single layer.
  9. Cook until golden
  10. Air fry for 8–10 minutes, flipping halfway through, until crispy and golden brown.

Notes

Don’t overcrowd the air fryer—cook in batches if needed.
Keep the rolls tight so the filling doesn’t spill out.
Want extra crunch? Sprinkle a little shredded cheese on the outside before air frying.
These reheat beautifully—just pop them back in the air fryer for 5 minutes at 350°F.
