Method
- Preheat your oven to 400°F (200°C).
- Cook the turkey bacon according to package instructions until crisp. Remove from the pan and chop into bite-sized pieces.
- In the same pan, sauté the onion and broccoli in olive oil. Season with salt and pepper and cook for 5–10 minutes, until softened.
- In a mixing bowl, whisk the eggs together with cheddar cheese, garlic powder, salt, and pepper.
- Grease a large baking dish, then spread the sautéed veggies and turkey bacon evenly across the bottom.
- Pour the egg mixture over the top, making sure everything is coated. Sprinkle extra cheddar on top if you like.
- Bake for 20 minutes, or until the eggs are set and the top is golden.
- Let cool slightly, then slice into squares and enjoy!
Notes
Don’t skip greasing the dish: Eggs love to stick, so a little nonstick spray or oil will save you from scrubbing later.
Chop your broccoli small: Smaller florets mix in better and give each bite great texture without overwhelming chunks.
Make it ahead: This casserole keeps beautifully in the fridge for up to 5 days—perfect for meal prepping a week’s worth of breakfast.
Easy Swaps & Additions
This recipe is super flexible! Try some of these variations:
Swap the meat: Use classic pork bacon, chicken sausage, or leave the meat out for a vegetarian version.
Switch up the cheese: Mozzarella, Swiss, or pepper jack all work beautifully.
Add more veggies: Bell peppers, zucchini, mushrooms, or spinach make tasty additions.
Boost the flavor: Fresh herbs like parsley or chives, or spices like paprika, can take this to the next level.
