- In a mixing bowl, whisk together the eggs, cottage cheese, and chives until just combined. Don’t worry about lumps – the cottage cheese will melt during cooking.
- Heat the avocado oil in a frying pan over medium heat. Once hot, pour in the egg mixture and let it sit undisturbed for about 30 seconds.
- Using a silicone spatula, gently lift and fold the eggs. Let them sit again briefly, then stir. Repeat this process until the eggs are just set and still slightly soft.
- Remove from heat and season with sea salt, black pepper, and everything bagel seasoning as desired.
- Serve immediately while warm and fluffy.
Notes
Go light on the salt – cottage cheese already has plenty.
If the eggs are cooking too quickly, reduce the heat to medium-low.
Leftovers can be reheated gently in a skillet to keep them creamy.
