Ingredients
  

  • 6 large eggs
  • cup cottage cheese
  • 1 tablespoon avocado oil or olive oil
  • 1 tablespoon fresh chives finely chopped
  • Everything bagel seasoning to taste
  • Sea salt & ground black pepper to taste

  • Large mixing bowl
  • Nonstick frying pan
  • Silicone spatula

Method
 

  1. In a mixing bowl, whisk together the eggs, cottage cheese, and chives until just combined. Don’t worry about lumps – the cottage cheese will melt during cooking.
  2. Heat the avocado oil in a frying pan over medium heat. Once hot, pour in the egg mixture and let it sit undisturbed for about 30 seconds.
  3. Using a silicone spatula, gently lift and fold the eggs. Let them sit again briefly, then stir. Repeat this process until the eggs are just set and still slightly soft.
  4. Remove from heat and season with sea salt, black pepper, and everything bagel seasoning as desired.
  5. Serve immediately while warm and fluffy.

Notes

Go light on the salt – cottage cheese already has plenty.
If the eggs are cooking too quickly, reduce the heat to medium-low.
Leftovers can be reheated gently in a skillet to keep them creamy.
