The Best Baked Copycat Starbucks Egg Bites Recipe

If you’ve ever grabbed a bite at Starbucks and thought, “Wow, I could eat these egg bites every single day,” you’re not alone. But at around five bucks a pop (pack of 2), that habit adds up fast.

Ingredients
  

  • 6 large eggs
  • 1 cup full-fat cottage cheese
  • ½ cup shredded Gruyère cheese
  • ½ cup shredded Monterey Jack cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • A dash of hot sauce optional, but recommended!
  • 3-4 strips bacon cooked until crisp and crumbled

Method
 

  1. Preheat & Prepare – Set your oven to 300°F. Place a baking dish filled halfway with water on the lower rack to create steam.
  2. Blend – In a blender, combine eggs, cottage cheese, shredded cheeses, salt, pepper, and hot sauce. Blend until smooth.

  4. Assemble – Grease a muffin tin well. Pour the egg mixture evenly into the cups, about three-quarters full. Sprinkle crumbled bacon on top. (This copycat Starbucks Egg Bites recipe makes about 12 egg bites, assuming you’re using a standard muffin tin.)
  5. Bake – Place the muffin tin on the middle rack (above the water dish) and bake for 20-25 minutes, until set.
  6. Cool & Serve – Let the egg bites cool for 5 minutes before removing. Enjoy warm or store in the fridge for later.

Notes

Veggie Delight – Swap bacon for sautéed mushrooms and spinach.
Spicy Southwest – Add diced jalapeños and a pinch of cumin, and top with a dollop of salsa.
