- Preheat & Prepare – Set your oven to 300°F. Place a baking dish filled halfway with water on the lower rack to create steam.
- Blend – In a blender, combine eggs, cottage cheese, shredded cheeses, salt, pepper, and hot sauce. Blend until smooth.

- Assemble – Grease a muffin tin well. Pour the egg mixture evenly into the cups, about three-quarters full. Sprinkle crumbled bacon on top. (This copycat Starbucks Egg Bites recipe makes about 12 egg bites, assuming you’re using a standard muffin tin.)
- Bake – Place the muffin tin on the middle rack (above the water dish) and bake for 20-25 minutes, until set.
- Cool & Serve – Let the egg bites cool for 5 minutes before removing. Enjoy warm or store in the fridge for later.
